Step into the kitchen of The 17th Century, where you will be introduced to nearly forgotten “craft alchemies” passed down through generations.

Unlike anywhere else, here you are invited to take part directly in the original artisanal process: from soaking rice with ash derived from coconut husks from Cù Lao Chàm Island, to patiently turning ancient stone mills, and hand-kneading golden dough with your own hands.

This is a truly unique experience, where your hands directly connect with the essence and heritage of ancient artisans.

The journey begins at the ancient Bá Lễ well, located in Hội An. Here, you will hear the story of the sacred water source—the secret that creates the unique firmness and distinctive texture of Cao Lầu noodles.

Take a moment to truly feel history on your shoulders as you experience carrying water using traditional bamboo yokes, just as the people of Faifo (Hội An) have done for hundreds of years.

The 17th Century is an immersive cooking experience in Hoi An where guests learn the origins of Cao Lau while participating in traditional cooking techniques inspired by 17th-century Faifo culture.

Unlike typical cooking classes, this experience allows you to go through the full traditional process of making Cao Lau – from rice soaking with wood ash water to stone grinding, handmade noodles, and farm activities in Tra Que Village.

You will learn how to prepare authentic Cao Lau, Hoi An’s signature dish, including handmade noodles, braised char siu pork, crispy crackers, and fresh Tra Que herbs.

The experience lasts approximately 4 hours, from 9:00 AM to 1:00 PM, including cooking activities and a visit to Tra Que Vegetable Village.

The package includes hotel pickup and drop-off, all ingredients, a professional cooking instructor, hands-on farming activities, a welcome drink, and a full bowl of Cao Lau made by yourself.
